「張家黑糖」因為是純手工製作，因此過程顯得特別辛苦，手工黑糖達人張錫斌：「從甘蔗的栽種開始，我們的甘蔗園培土會深一點，培土深，讓甘蔗在大風中可以站穩一些，因為甘蔗如果被風雨吹倒了，消耗的人力就要增加一倍以上，假上雜草實在很多，在不用農藥的情形下，種植甘蔗期間的雜草整理，變成每天必要的工作。」
