為奠定現代化屠宰作業之基礎，改善肉品衛生，提高肉品品質，經濟部於民國58年為奠定現代化屠宰作業之基礎，改善肉品衛生，提高肉品品質，經濟部於民國58年2月公佈「台灣地區新型屠宰場設置標準」，規劃新型屠宰場分五大區設立，其後鑑於北區六縣市實施範圍過大，64年9月修訂改以縣市為設立範圍，至65年9月經濟部復決定將家畜市場與新型屠宰場合併為肉品市場，統一經營管理。
68年1月台灣省政府委員會第1457次會議審議通過「各縣市肉品市場設立計畫」，南投縣政府乃據以籌設肉品市場，毛豬集中於肉品市場拍賣交易、屠宰。68年3月由南投縣政府、本縣各級農會及家畜肉類商業同業公會等單位集資組成籌建委員會，負責籌建事宜，於民國70年3月開工興建至72年9月完成，投資總額新台幣壹億元。
