牛爸爸牛肉麵創立於1990年5月，創辦人王聰源，原為台灣移民加拿大的華僑，從事建築業。因懷著對牛肉麵的喜愛與憧憬，在四十歲的那年選擇回台北改行賣牛肉麵，決心要做出最美味的牛肉麵。 牛爸爸在開業的二十年間，從剛開業時的薄利多銷，隨著產品的創新、品質的要求，進而改走精緻路線。偏高的價格以及精緻的做法，曾引發數次討論的熱潮，也為台灣的牛肉麵掀起一股新氣象。012年9月，牛爸爸牛肉麵遷址於內湖民權東路6段149號，重新定位牛肉麵，目標 碗碗世界第一。
